神木大燴菜是美味菜肴待客上品。

燴菜,本是當地百姓為解決人多菜少或冬季吃菜難而制作的一種“大鍋飯”幾乎所有蔬菜都可入燴,口味卻千差萬別,常見的有白菜燴菜、洋芋燴菜、蘿卜燴菜、土豆燴菜等。其主要成份為豬肉、粉條、洋芋為佳。也有用紅燒肉丸子雞塊的.。

陜北溝峁縱橫,水源奇缺,冬季寒冷,冬春之際難見鮮菜,百姓菜碗中就以酸白菜,洋芋為主。保存白菜的方法就是腌藏,聰慧的陜北婦女烹制的酸白菜熬洋芋是民間最普遍的吃法,酸味新穎,口味鮮美,風痱一時。

燴菜其歷史可追溯至明清時期,是腳人、攬工漢、小商小販們最喜歡的飯菜。所謂大燴菜,其實就是土豆塊、豆腐塊、燒肉疙瘩、圓粉條子,外加青菜少許,連湯帶汁,滿滿一大盤,即充饑又解饞,耐飽耐渴,稀里呼嚕,一頓狼吞虎咽,最適合陜北人的粗喉嚨大肚皮,人人覺的值得、劃算。

而今燴菜經過烹飪大師的多年發展,已成為榆林的一道名菜。它選本地的土豬肉、土雞肉、山羊肉配以有名的榆林豆腐、佳縣粉條、土豆和十多種配料、輔以新鮮蔬菜,做成不同口味、各有特色的大燴菜。他們顏色紅褐誘人,配菜協和,豬肉噴香,洋芋穌綿,粉條滑爽,是佐飯的上佳美味。名聞西北。是本地和外地來榆人們的首選特色菜之一。是陜北人引以為豪的創造。
