燉羊肉,塊狀,連骨帶肉,肉塊肥厚,是飽享羊肉的最佳飲食。將羊肉清洗干凈之后,放入鐵鍋中,原汁原味,香美無比,所以通常我們燉羊肉就是骨肉相煎。

【材料準備】

原材料:羊肉

輔料:生姜片、蔥花、干辣椒、地椒、調味料末


【做法】

1. 羊肉切成塊狀,放入鐵鍋中,鍋里倒入涼水,把羊肉放入。(一定得涼水下鍋,這樣對減少膻氣有一定的作用)。

2.等鐵鍋快燒開了,就會不斷有白沫子溢出,這時候就得勤快一點,把白沫子漂出去(這一步很關鍵,如果不把白沫子弄出來,羊肉湯一來會很渾濁,二來也影響羊肉的口感)。

3.等到煮開的湯不再有白沫子,就可以放入生姜片,蔥,鹽,干辣椒(多放點,去膻),干花椒粒,這些材料最好放到紗布里包起來,或者那種不銹鋼的煮肉小盅里也不錯,這樣湯就很好,沒有雜物。改用小火燉爛即可。如果條件允許的話,可以放入一種去膻功效極強的調味品---地椒。
